Chemex Guide
Thick filter and a slow drip, for a soft, very clean-tasting cup.
The Chemex makes a smooth, clean coffee for groups. Use a medium-coarse grind. For a 6-cup brewer.
Recipe:
30 g of coffee (medium-coarse, like fine patio sand), 500 g of water. Total brew time: ~5:00 min.
Prep:
Place the filter in the 6-cup Chemex (3-layer side facing the spout). Pour hot water (92-96°C) to preheat and rinse it. Discard the water out the spout.
Brew the coffee:
Measure 30 g.
Grind medium-coarse. Add to the filter. Press lightly with a spoon to settle the filter.
Bloom:
Zero out the scale, start the timer. Pour 50 g of water evenly for the bloom.
Main pour:
At 0:30, pour the remaining 450 g in a slow spiral — from the center outward, in intermittent pulses. Finish pouring at 3:15.
Finish:
Let it drain until ~5:00 total. Discard the filter.
Serve:
Serve immediately.
Notes:
Water at 92-96°C prevents bitterness.
Pour in a spiral, without touching the walls.
Adjust ratios and timing to suit your coffee and taste.
